Dear Kim,

Kimberly,

I tried to go to sleep but I couldn't get you off my mind our out of my heart. Since I started on this whole blogging adventure I have learned so many valuable ideas. I call it an adventure because It was one of the places I started to realize how much information was out there for someone wanting to be a better wife and mommy. Lets be honest we love it but it can get a little monotonous. ( wow, big word for me hunh) In no realm of my imagination would I have you believe these are any of my ideas. Here are a few things that have REALLY changed my life lately:

Crockpot: You can do the normal make a meal for the day thing which is always great or you can make your meat for the week on Monday. I'm lovin this one. On Mondays I make a bunch of chicken breasts ( just put in crockpot salt and pepper with some chicken broth). When they are done you can use them for all kinds of recipes like the enchiladas, casseroles, or soups. If you want to use them for something not shredded or chunked take them out a little sooner.

Lots of women do the fix and freeze. Make several meals in one day and freeze them for later. Not my favorite but you may like it. The one I do like to freeze is chicken pot pie because you can make so many at once. Make the guts of the pie and then put it in a ziploc freezer bag and freeze for another day you don't want to cook. All youll need is the crust. This is a really yummy recipe!

Im learning the art of double duty meals. This one is a little tricky for me but as Im doing it more comes to my mind. The main one I do is pork roast. I make a pork roast in the crockpot of course for dinner one night.... and a side like sweet potatoes or whatever you like then I just shred the rest and add barbecue sauce ( I get Sonnys sauce from Sams) to the rest. BBQue sandwiches for the next night.


Anyway, you get the general idea. And let me tell you, any ladies reading this with more ideas PLEASE oh PLEASE share them!!!

You are by far the best Mom a girl could ever ask for. I love you more then I tell you. I mean really your the huggy feely one right? HA HA I don't always tell what I need but somehow you always now. How you do that I have no idea. It means the world to me that we get to spend so much time together and my boys cherish you like they do. As lucky as I am to have you as my Mom they are even luckier to have you as their Grandma. I hope you have a wonderful birthday and someday soon we will get rid of all the stinky boys around us and have some girly time! Oh wont that be nice!!!!!!!!!!!!!!!!

The week that would not end!!!!!!!!!


Oh, please make it end. The week started with Tommy at the doctors office and Jimmy climbing the walls. That Thursday Tommy was much better but Jimmy was down for the count. My poor baby was a mess. I'm not sure anything was left in him and then he just had no energy. He is still that way. Everyone seemed to make a recovery for Tommy's basketball party Friday night.... and then it happened. God at least had mercy on me and waited until everyone was asleep to give me the bug I thought might end my life. Oh, I know you are thinking I'm being dramatic but I really cant remember being that sick in my life. I made a promise that I would never eat at a pizza buffet with 200 other children during the flu season. UGH. Tommy got his well deserved trophy though and we are all making a recovery. Does anyone else notice what is missing from this story? I will tell you. Daddy did not get sick. Mommy was the one wiping, cleaning and snuggling while Daddy stayed a good distance back making the meals, and keeping the kitchen clean and laundry done. Quite a team we make hunh! I must also add that Sat. I thought I was feeling a little better so we took a drive and ended up at a flea market. If you are still a little woozy never ever ever go to a place they are selling chickens...... just trust me!

My poor little guy. Hes not feeling so well today. This is what happens when your bored in the waiting room. You know he is sick when the hood stays up. HA HA



$25.00 to see the doc ( and get no meds I might add) and $50.00 more at Target. He really thought the Pokemon macaroni would help him to feel better, as well as the Puffs with Vicks. Im a sucker.Let me just add that the Sinus Rinse is my new FAVORITE product! I highly recomend it.



Well, Im going to go enjoy the Benedryl induced quite in my home! Young and the Restless here I come!!!!!!!!!!!!!!

$787 Billion and stocks still fell...

I guess the air was a little too thin in the Mile High City for Obama to come to his senses. Who am I kidding, he (and the Democrats) has absolutely lost his marbles. There is no chance in bringing back that socialist. Hats off to the Republicans who voted against this catastrophe.
Has Wall Street lost its faith in the inept decision makers in Washington? When Obama signs and Geithner speaks, stocks drop. Is there a correlation?

I cant wait to make these. They look really yummy but I cant get the picture to post. You just have to trust me. I have a feeling for my family I may have to double this one.

Recipe of the week - Chicken Enchiladas


1 small onion chopped
2-3 chicken breasts cooked and chopped
1 cup shredded cheddar cheese
1 jar salsa (about 2 cups)
4 oz. cream cheese
8 large flour tortillas
*Cook onion until tender. Add chicken, 1/2 c. of the cheese, 3/4 c. of the salsa and all cream cheese. Melt all together. Spoon into tortillas and wrap. Drizzle remaining salsa and sprinkle cheese over the top.
Cover and bake 15-20 minutes on 350.

Valentines Day


The best way to find out who your childs spending most of their time with at school is very easy. Those who get the little cards with no hearts or tattoos just happen to be in the same room with him. Those who get a little card with a heart and maybe a tattoo are friends. Then there are those who get the BIG card with the hearts and the tattoos. Three boys even got two tattoos. That's friendship people. I find it adorable that he cares soooooooooooooo much. He has to pick just the right one for each card. This really could take all night! I'm not complaining though because I'm pretty sure this could be the last year he even does valentines cards seeing as he is a typical boy. Ill take it while I can.

Tommy and Jimmy, I am sorry.

I want the both of you to know that I am truly sorry. I did everything I could to keep Obama from getting elected. You will be paying for his socialistic ideas, corrupt cronies, and overall inexperience for years to come. Government is not the answer to this question and should not be viewed in that way. We are America, where immigrants have been coming to for hundreds of years to escape their own oppressive governments. America was built and flourishes on principles of capitalism, not socialism. People come to America to succeed and live the American Dream, not live in a welfare driven society that was created by inept leaders.

Lord help us if he cuts funding for the military and defense spending.

I see many a Frat party in this kids future. He thrives off others laughter. Gotta love him!


So, what color does this look like to you. I say it has blonde highlights. Marc says it is red. Its a little hard to tell since I just got done working out but you get the general idea. So let me know what you think. If its red I gotta fix it soon! I'm so over this hair color thing. I think I'm just gonna go back to boring old brown!

So, how many pots does it take you to make corn? Well, for me it takes three! This is what happens when the day is as beautiful as today was. It was gorgeous outside. While the boy were playing in the backyard I was trying to make dinner and keep a good eye on them. (And about 25 other things) If at first you don't succeed try try again. If that doesn't work try again, and if that doesn't work just order out I guess! Mom always taught me if it was burning don't stir just pour into another pot, guess I learned something. Oh yeah, I got a new cast iron skillet. I cant wait to try it out. I need some good recipes for fish. Wish me luck I don't burn the house down. HA HA. I sure hope tomorrow is as beautiful as today.... were having leftovers so we should be ok!

I really don't have to much to say, I believe the video speaks for its self. All I can say is that this boy keeps me on my toes. Tommy kept me on my toes but in a very different way. Tommy was always talking non stop about anything and everything. He wanted my attention all the time. Jimmy on the other hand says less but TOUCHES EVERYTHING! Hes a mess, what can I say. When he is about 20 I will show him this video and laugh! Gotta love that little goober.

Tommy has always liked to help me in the kitchen. The older he gets the more help is to me! He is a real boys boy but you get him in the kitchen and he loves it! You do have to remember though that you only have his attention for about 5 minutes then he's gone, possibly without you knowing. Hes working on measurements at school so what better way to learn then in the kitchen!
